Chocolate Cream Cheese Cupcakes 1 (9 oz.) pkg. cream cheese, softened
1 1/3 c. sugar
1 egg
6 oz. chocolate bits
1 1/2 c. flour
1 c. salad oil
1/4 c. cocoa
1/4 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
1 tbsp. vinegar
1 c. water
Beat cream cheese, 1/3 cup sugar and egg until smooth and add the chocolate bits. Set the mixture aside. Sift together flour, 1 cup sugar, cocoa, salt and baking soda into a bowl. Add vanilla, vinegar, water and salad oil to the sifted mixture. Stir until smooth. Batter will be thin. Fill cupcake liners about 1/2 full of batter. Drop cream cheese mixture (about 1 tablespoon) in center of each. Bake at 350 degrees for about 25 minutes. When cold, store covered in refrigerator.
