Classic Chocolate Cream Pie 2 1/2 c Milk
1 c Half & half
5 Egg yolks
3/4 c Sugar PLUS 3 tb Sugar
1/3 c Cornstarch
Salt
1 1/2 c Semi-sweet chocolate chips
1 3/4 ts Vanilla
1 c Heavy cream
1 9" pastry crust, baked & cooled
Whisk together milk, half and half and egg yolks. In a saucepan, combine 3/4 cup of sugar, cornstarch, and salt. Whisk in the yolk mixture and cook over medium-low heat, stirring constantly, until mixture thickens and comes to a boil, 10-15 minutes. Boil, stirring, 1 minute. Remove from heat. Stir in chocolate chips and 1 tsp vanilla. Pour into cooled pie shell. Refrigerate til set. Beat cream with 3 tbsp sugar and 3/4 tsp vanilla til it holds stiff peaks.
